This simple recipe will help you cook incredible, juicy, quick-to-make New Year’s Mandarin Cake

**Ingredients:**
Eggs, 3
Sugar, 80 g
Flour, 150 g
Sugar, 4 tbsp
Baking powder, 1 tsp
Butter, 40 g
Milk, 100 ml
Vanilla sugar, 5 g
Mandarins, 5-6

1. Make the caramel first. Put 4 tablespoons of sugar in a dry skillet over medium heat and, without stirring, let it melt for 5 to 7 minutes. Reduce the heat and whisk the caramel gently after it has melted.

2. Cut the mandarins in half after peeling them.

3. Beat the eggs with 80 grams of sugar in a another bowl. Then, add the vanilla sugar and a touch of salt.

4. Slowly pour in the milk and melted butter (or vegetable oil if you like).

5. Using a mixer or whisk, blend in the flour and baking powder until smooth.

6. Spread the caramel evenly over the bottom of a baking dish lined with parchment paper.

7. Lay the cut sides of the mandarin halves on the caramel.

8. Cover the mangos with the prepared batter.

9. Bake the cake for 30 to 40 minutes after preheating the oven to 180°C (350°F).
